Just before we get started, let’s answer this question: Is Quebec Food the same as French Food?
Traditional food of Quebec is as rich, vibrant and diverse as the province itself. The strongest influences on traditional Quebec cuisine come from France, British and Ireland, as they are the three largest ethnic groups in the province.
Also, many aspects of Canadian First Nation cuisine have also had a significant impact on Quebec cuisine. Other European influences on Quebec food include German and Italian, especially around Montreal.
On my tours, it sometimes happen that my guests believe that French and traditional food of Quebec are the same. As you will learn on my walking tours, Quebec City was a French colony until 1763 when it became a British colony for over a hundred years. So yes, we do have some French influence. Chef Elliot Beaudoin creates dishes that are both innovative and rooted in local traditions, using foraged ingredients and seasonal produce. The modern decor and intimate setting make it a perfect spot for a celebratory meal. My partner took me out for dinner over there on my birthday last year and eating there is not just having a meal, it is a total immersive experience! Wow!
Signature Dish: I highly recommend the tasting menu with the wine pairing. It combines flavors and textures to highlight the region’s unique culinary heritage. The choice of wines with each plate is also excellent.
